
In my attempt to use all the leftovers and clean out the fridge.... I have all sorts of recipes that I want to try this week.... I came up with the following dinner:
A Turkey Slaw Burger with Sweet Potato Chips and Blue Corn Meal Coated Okra:
We had leftover turkey burgers so I nuked it for 60 seconds with a slice of Cheddar Veggie Slice, I then topped it with Broccoli Slaw.
We had one sweet potato and one regular potato that also needed to be used and okra leftover from the Farmer's Market.
Turkey Slaw Burger
Extra Lean Turkey
1/3 cup of Feta Cheese
1 tablespoon of Italian Seasoning
Shape into to burgers and grill or broil until cooked through.
Broccoli Slaw
I package of Mann's Broccoli Slaw
1 tablespoon Dijon Mustard
1 Tablespoon of Apple Cider Vinegar
A dash of Extra Virgin Olive Oil
Stir all ingredients together.
Sweet Potato Chips
Slice potatoes and put on a prepared cookie sheet with parchment paper, spray with Extra Virgin Olive Oil, sprinkle with Sea Salt and bake in a 425 degrees oven for 30-45 minutes until golden brown and crispy.
This was a very messy but satisfying meal! The the crunchy slaw made the turkey burger pop! Really great combo..... I love Feta Turkey Burgers.... one of my all-time favorites. The Sweet Potato Chips were crispy and delicious..... and the kids and I gobbled them up!
I am afraid the okra was not a real winner. I coated the okra with egg white and blue corn meal and baked them for about 30 minutes. They were nice and crispy but needed a little something.... a kick of spice would have made them better.
Steve (my husband) has been at the Texas Book Festival all day and met Addie Broyles, food writer for the American Statesman and who blogs at Austin360.com Relish Austin. I am a big fan and a little jealous... but will have an opportunity to meet her next weekend when she is hosting Appetizers with Addie on Sunday, November 9th at Spicewood Vineyards at 2:00pm.
Bummed I didn't get to make it to the Texas Book Fair this year.... but there is always next year.
