Cranberry Pecan Oats

Good Morning!

I was a little down and out yesterday and actually did not have much to report on the food front but I am happy to report that I am feeling better and just consumed the most amazing bowl of oats ever.  That is right, I decided to have oats for lunch and it may have to become a habit.



Wow!  This was so good and I honestly can't wait to have another bowl tomorrow morning. 

Cranberry Pecan Chia Oats 

1/2 cup rolled oats
1/2 cup Silk Heart Health Vanilla Soymilk
1/2 cup water
1 tbsp of chia seeds

Combine ingredients in medium pot and cook over medium heat for 4-5 minutes.  Remove from heat and top with:

2 tbsps of fresh cranberry sauce
1 tbsp of chopped pecans

Ah... I love fall and was so excited to see fresh cranberries in the store that I had to buy some.  I promptly made some fresh cranberry sauce and then decided it would be fantastic on oats and was going to hold out until tomorrow to give it a whirl but realized I had not already had a bowl of oats today so I what difference does it make as to what time I eat them.  Right?   Yum!

Cranberries are awesome and wanted to see if any of you have any favorite cranberry recipes that you are willing to share?  I love making Fresh Cranberry and Walnut Bread and am going to search my cookbooks for other recipes.

Speaking of cookbooks, I took a look at the new Ellie Krieger cookbook called So Easy and it looks like a good one.  I am going to have to pick it up soon.  Lots of good recipes and all of her stuff turns out really well and does not taste "diet-y".

So let me back track just a bit to breakfast.  Surprise, surprise-- it was Almond Butter and Banana on an Ezekiel English Muffin.


 
 
Almond Butter & Banana on Ezekiel English Muffins
 
1 Food For Life 7-Sprouted Grain English Muffin
1 small banana, sliced
1 tbsp almond butter
raspberries for garnish
 
I have to admit that I like the Food for Life 7-Sprouted Grain English Muffins better than the Cinnamon Raisin.  I don't know what it is about the 7-Sprouted Grain but they are truly special in my eyes.  They have been out of stock at my local grocery store and I was getting a bit nervous when I could not find them for a few days.  I stocked up and am keeping 1 in the freezer for use later. 
 
On the exercise front,  I got in 7 miles today and needed it.  The scale was up this morning as I had expected.  I indulged in a little too much Zucchini Snack Cake and did not do a lot of exercise so could tell last night that the scale would not be as "friendly" today.  I am back on track today and am drinking lots of water, have a great dinner planned  am just going to follow my plan.

 I am also looking for any good book recommendations?  I am a little embarrassed to admit that I have made it through book # 3 of the Twilight Series but do not want to actually spend money on #4.  I have plenty of friends that will loan it to me but would love a little break from vampires and werewolves. I am tempted to go and buy the Ted Kennedy Memoir as I imagine it is very inspiring and would love something along those lines.

Wow!  It is already 12:20pm and time for me to get moving on my errands.  I will check back later with dinner and possibly a light dessert option.
