I hope you had a great weekend. I can't believe it is over already. The kids only have 2 days left of school and we are going to be busy, busy this week. We have parties to attend each day and then have guests visiting from Des Moines and then are heading to Des Moines ourselves for a visit. I am from Des Moines, IA and the rest of my family lives there so I am excited to see my mom and sisters and their families! A great way to kick off the summer.
I worked this morning and got my a_s kicked at the gym. A fellow trainer and I did a leg workout together and I honestly don't know if I am going to be able to walk tomorrow. I played tennis with my family this afternoon and could already feel the effects of the workout then. It is tough getting older I tell you! We really enjoyed playing tennis and are looking forward to playing more this summer. It was also fun to mix up my workout routine a bit.
After tennis, Zoe and I headed over to the nail salon to get a pedicure and in her case a manicure and pedicure. I love doing girly stuff like this with Zoe. I can tell we are going to have many fun trips to the salon together. She got her nails painted bright green with flowers.
When we got back my husband had made us a beautiful summer dinner.
Grilled Coho Salmon served with Jicama Slaw and Asparagus.
I love this meal. Salmon is rich in Omega-3, which has several health benefits to its credit. The Jicama Slaw is still crunchy and delicious even after two days. Yah. Asparagus has so many health benefits and it happens to be my favorite veggie. It is a great detox vegetable and an anti-aging vegetable and I need as much of that as possible! This meal makes me feel so healthy and satisfied. Thank you Steve.
The Grill Master also Grilled Chicken with two different marinade; he made a home-made teriyaki sauce and the other with Mama's Fire Traditional Tibetan BBQ Sauce.

Now, I would not be true to myself if I did not whip up a dessert to conclude the weekend with would I??
I do have to preface this by saying that I needed to bring goodies to one of the parties tomorrow so I will be saying "farewell" to these freaking amazing bars but not before giving one a try first.
The Infamous Magic Bars
Ingredients
1/2 cup butter, melted
1 1/2 cups graham cracker crumbs
1 (14 ounce) can sweetened condensed milk
1 cup semisweet chocolate morsels
1 cup Sunspire Peanut Butter Chips
1 cup flaked unsweetened coconut
1 cup chopped peanuts
Directions
1.Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray.
2.Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, peanut butter chips, coconut and nuts. Press down firmly with a fork.
3.Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.
If you are trying to be a bit healthier but still want a sweet treat, might I suggest 1 tbsp of the Sunspire Peanut Butter Chips and 1 tbsp Dark Chocolate Chips. It is like eating a peanut butter cup without the guilt. 110 calories. Yum! Lucky for me I have leftover peanut butter chips and dark chocolate chips!!
Time for me to get the kids showered and organized so we can all watch the Next Food Network Star together.

Your dinner looks amazing and those bars...I'll have 10 please! I want to finally buy hubby a grill so we can partake in these yummy sauces and marinades!
