Good Morning and Happy Hump Day!

I sent my son Emmet off to Outdoor School today and am already missing him.  I know he is in good hands and that he will have a great experience but he is growing up and that is tough!  We did not have Outdoor School where I grew up but I think it is a great program. Sixth graders from all PPS schools — about 3,500 in all — will enjoy learning in the natural environment in at Outdoor School.

Students observe natural processes and conduct labs in daily “field studies,” heading out of doors to learn no matter the weather, said Dan Prince, coordinator of Outdoor Schools for the Multnomah Education Service District. Students also learn critical life lessons, gaining confidence, poise and independence as many of them spend their first extended time away from their families.

So since I am slightly off kilter with having one kid fly the coop, I decided it was time to whip up my favorite concoction, a Spinach Banana Cream Smoothie in my new favorite cup- the Tervis Tumbler.

As part of the Foodbuzz Tastemaker program, I received a Tervis Tumbler in the mail and absolutely love it!

These Tervis Tumblers are awesome.  They are virtually indestructible, keeps your drinks hotter or colder due to the double- walled insulation and they are microwave, freezer and dishwasher safe!

I have to say, it is my new favorite water and smoothie cup and am not sharing it with the rest of the family!  Actually, I liked it so much that I ended up ordering some more for my home because we have broken so many glasses in the last year that we are down to a few matching cups and that is it!

Spinach Banana Cream Smoothie

1 cup So Delicious Unsweetened Coconut Milk

1 scoop whey protein powder

1 frozen banana

1 cup fresh spinach

1 tbsp chia seeds

Combine all ingredients into Vitamix or blender.  Turn on variable 1 and quickly turn to variable 10 then switch to High.  Blend for 30-60 seconds. 

Enjoy!!

This was completely delicious. I actually liked it so much that I am contemplating making another one for lunch.
