Good Morning and Happy Saturday!
I hope everyone is off to a good start today. I am playing catch up this morning and am enjoying a brief moment to myself. The dishwasher is humming, the boys are off to Marquam Park and Zoe and Gumbo (my dog) are still asleep. Ahh... nice to take a breath and enjoy a warm cup of Joe along with a fabulous bowl of Steel-Cut oats. Life is good. I know I say it all the time but it truly is the little things in life that make me happy. I am full of gratitude this morning and am looking forward to spending time with my family and having a productive weekend. I have lots to do this weekend so this 10-20 minute respite is nice:)
Steel Cut Oats topped with Blueberries, Raspberries, Chia Seeds and Almonds
3 cups of water
1 cup of Bob's Red Mill Steel-Cut Oats
1/4 tsp sea salt
Bring 3 cups of water to a boil in a medium pan. Add oats and stir. Reduce heat to a simmer and cook for 15-25 minutes, stirring every so often. I cooked my oats for about 20 minutes because I like them slightly al dente. Once you have achieved your desired consistency, remove from heat and let sit for two minutes. This will make 4 hearty servings of oats.
Top with:
Blueeberries
Raspberries
1 tbsp Chia Seeds
1 tbsp sliced Almonds
1 tsp raw honey
Oh so yummy!
I reserve making Steel-Cut Oats for the weekends because I like them best fresh out of the pot.
Oatmeal makes me oh so happy!

I have had a banner week because I even got to go out to lunch with my foodie friend, Tammy, at my all time favorite- The Blossoming Lotus.
Tammy and I had a hard time deciding what to get but defaulted to the:

tahini-cilantro pate, cucumber, micro greens*, carrot and avocado ranch in a leafy green wrap, with cashew sour cream

walnut & brazil nut falafel, tahini-cilantro pate, cucumber, onion and fresh tomato, wrapped in a leafy green, served with cashew sour cream

And you know that I had get my favorite juice:
Thai Greens
apple, lime, ginger, basil, cilantro
I really do love green drinks and this one if my favorite.
Tammy and I are trying to break out and try something new on our lunch adventures but love the Blossoming Lotus so much that we always default back to it. Has anyone been to the Farm Cafe? I just saw them on the Food Network last night and they were making the most delicious looking veggie burger. I am thinking we might have to try that next! Wow. I just went to their site and they are actually sharing their famous Veggie Burger recipe so I might just have to make them. Click here to get the recipe. So cool.
Last night we hit the Whole Foods for dinner and I was craving salad. Note to self- buy dark leafy greens this weekend. I am craving Spinach/Kale and plan on hitting the grocery store today to get all the fixings for a giant salad. Hmm.... it looks like a plan is coming together Farm Cafe Veggie Burgers served with a special Spinach Salad. Anyone care to join us for dinner tonight? So very excited.

Mmmm! I LOVE The Farm! That's one of my favorite picks for a delicious dinner. Their gnocchi and their ravioli are ridiculously good - and both clearly meals that you fast all week to gear up for ;) Also, their desserts. Oh dear. Definitely go there! :)
